Chicory (Cichorium L.) is similar to Chinese cabbage and belongs to the Asteraceae family. It occurs naturally in the Mediterranean region and many other parts of Europe, as well as in Western Asia and Ethiopia.
Chicory isn't very popular in Poland, which is a shame, because it's an exceptionally valuable and tasty vegetable. Due to its low calorie content, it's recommended for people on a weight-loss diet. Chicory is rich in nutrients such as vitamins C and B; mineral salts—magnesium, potassium, iron, manganese, phosphorus; and zinc—laccin and lacticrin.
Chicory has a positive effect on the digestive system, so adding it to a meal is always a good idea. It tastes great with salads and salads, and it also pairs well with nuts, cheese, meat, and cold cuts.
