When the time of the warm evenings arrives, the prospect of staying in the garden as long as possible becomes more tempting by the day. Or by the river. Or in the park. Or somewhere outdoors. A perfect stay in the open air for several hours consists of sitting on a blanket, accompanied by larks and nibbling on Mother Nature's gifts from a wicker basket, and surely nothing promotes a sense of harmony and oneness with nature quite like a vegan diet . Fill your stylish wicker basket with vegan snacks. In this article, you'll learn which plant-based dishes to take with you on a picnic.

Vegetables and pastes are a must-have veggie kit

Vegan picnic meals don't have to be tedious and complicated. Crunchy vegetables and creamy spreads are a reliable and quick snack. Springy young carrots cut into sticks and parsley root, kohlrabi, bell pepper, cucumber or cabbage seed are perfect. Also add halved radishes and cherry tomatoes. Various vegetable pastes or classics like hummus can be bought in the store or you can prepare them yourself. If you have a little more time, you can make sunflower paste. While the spread made from pods from a can or jar is prepared in no time at all, sunflower paste takes at least 30 minutes more. Why? Because the beans have to be soaked before they go into the blender jug.

How to make easy and quick spring rolls?

The recipe for spring rolls is trivial. Prepare your favorite veggies, rice or soy noodles, fresh herbs (cilantro, chives, mint, basil), some protein like smoked tofu or fried tempeh, soak in the rice paper and... pack! A nutritious vegan picnic snack is ready! Prepare dips that are as simple as they are delicious, such as sesame sauce with tahini or sriracha mai. Or just throw a bottle of soy sauce in the picnic basket.

How do you make veggie tortilla rolls?

Mash the avocado with the finely chopped garlic, some lime juice and salt with a fork and place directly on top of half of the cake. Brush the next half with the pod paste – puree the canned red beans or treat with a fork like you would an avocado. Add fresh veggies like diced peppers, as well as pickled jalapeños, baby spinach, and red onions. Roll up into tight rolls. Tortillas prepared in this way can be cut into smaller pieces or taken away as wraps.

Salad with couscous and dried tomatoes - an instant recipe

Couscous is great because it's quick to prepare. Simply pour hot broth or water over the groats and leave covered until the liquid has been absorbed. Then add the finely diced paprika powder, chopped sun-dried tomatoes, roasted sunflower seeds and olive oil. Season to taste.

Throw plant-based club sandwiches in the picnic basket

Club sandwiches are the triangular ones and not at all reserved for carnivores. To put together such a snack, you can use organic toast, although any other bread that isn't too fragile will work just as well to keep the sandwich in check. One slice with vegan mayonnaise, spread the other with mustard. In between, iceberg lettuce, pickled or smoked tofu, pickles (onion, turnip, pickle – whatever you like). If two floors are not enough, add a third, for example with nachos. Halve and pass through with a toothpick.

Dessert idea - fruit skewers

Hope for sticks all you can! Using a spoon, carefully scoop out balls from the watermelon and melon, fill with strawberries, apples, bananas... whatever comes to mind. You can also melt some of your favorite chocolate and dip the skewers in it, then refrigerate for a while to let the frosting set.

 

How do you make homemade lemonade?

Standard lemonade consists of just three ingredients - lemon juice, water and sugar. To create the perfect drink, you need to discover your own proportions and watch the sugar (or other sweetener like erythritol or xylitol) dissolve. It's worth using a blender for this, but not necessary if you're going to mix everything together really well. There are also many variations of this drink. You can add frozen or fresh fruit (raspberry, mango, watermelon…) and herbs like mint or basil to the water and take it with you in a jar.

When preparing vegan food for a picnic, remember to pack everything in reusable boxes if possible. It doesn't have to be expensive, ecological packaging, ordinary jars work just as well. Enjoy your meal!
